Shrimp Sui Mai (Steamed)

Ingredients

  • 1 Tbsp garlic, minced
  • 1 Tbsp ginger, minced
  • 2lb shrimp (peeled and deveined)
  • 4 tsp soy sauce
  • 2 tsp rice wine vinegar
  • 2 tsp sesame oil
  • TT salt and pepper 
  • Wonton Wrappers (60) – yellow, circular preferred

Method:

Mince garlic, and ginger until finely ground in a food processor

Dice shrimp, place half into the food processor with remaining ingredients and pulse till smooth

Transfer filling to a mixing bowl and fold in remaining diced shrimp

Season and check for taste

Place ½ Tbsp of the mix in the center of the wonton wrapper and wet the edges with a small amount of water

Bring all the sides into the center and gently press to seal

Top should be exposed shrimp mixture and can be flattened lightly

Garnish with green onion, salted egg yolk or as desired

Steam for 8 minutes leaving one inch of space around each piece
