Seasoning a Carbon-Steel Wok with Scallions and Ginger

Ingredients

  • 1 bunch scallions
  • 1/2 cup sliced unpeeled ginger
  • 2 tbsp grapeseed or vegetable oil

 

Method

  • Clean wok

    • Wash inside and outside with hot water and dish soap.

    • Rinse thoroughly.

  • Dry

    • Heat wok on low heat for 1–2 minutes until completely dry.

  • Season

    • Heat wok over high heat.

    • Add oil, scallions, and ginger.

    • Reduce to medium heat and stir-fry 15–20 minutes.

  • Finish

    • Remove mixture and discard.

    • Wash with hot water and sponge.

    • Dry again on burner.

Result

  • Wok is seasoned and ready for cooking.
