Ingredients:
- 3 oz. unsalted butter
- 1 cup water
- Pinch of salt
- 1 cup flour
- 4 whole eggs
- 1 cup grated cheese (hard cheeses are preferred)
Method:
Heat oven to 425-degree oven
In a heavy saucepan, heat butter and water bringing to a simmer. Reduce heat to medium. Using a wooden spoon, add salt and flour. Stir constantly for about 3 minutes: add cheese and remove from heat.
Using a stand mixer with the paddle attachment, place flour mixture in bowl and turn on medium speed. Add one whole egg at a time being sure to incorporate before adding the next.
After all eggs are incorporated, place mixture in a piping bag using a plain open tip. Pipe out onto parchment or a sprayed sheet pan. Each puff should be about 1” in size. Bake until golden brown – approximately 15 minutes. When you remove from oven, grate a little cheese over the top if desired.
Allow to cool.
You can fill your Gougeres or serve them on their own. I like to use a soft cheese and fill.
