Ingredients

| 1 | Each | Garlic Cloves |
| 2 | Tbsp | Cilantro |
| 1 | Oz | Whole Butter |
| 2 | Oz | Chicken Stock |
| 4 | Each | Ripe Plantain |
| TT | TT | Salt |
Method:
- Cut bacon and cook in a saucepan, cook the bacon, when brown add garlic
- Peel and cut plantain (See Chef)
- In the “Pilon” add all ingredients and smash until you get the consistency you desire
- Adjust with butter and chicken stock (cannot be too soft)
- Season to taste
