Fufu – Cuba

Ingredients

Unit Quantity Prep
1/4 # Bacon / Bacon fat
1 Each Garlic Cloves
2 Tbsp Cilantro
1 Oz Whole Butter
2 Oz Chicken Stock
4 Each Ripe Plantain
TT TT Salt

Method:

  1. Cut bacon and cook in a saucepan, cook the bacon, when brown add garlic
  2. Peel and cut plantain (See Chef)
  3. In the “Pilon” add all ingredients and smash until you get the consistency you desire
  4. Adjust with butter and chicken stock (cannot be too soft)
  5. Season to taste
