Ingredients
- 1 lb large shrimp, peeled and deveined
- 2 tbsp + 1/2 tsp salt
- 1/4 tsp sugar
- 1/4 tsp roasted Sichuan peppercorns (ground)
- 2 tbsp grapeseed or vegetable oil
- 1 tbsp minced garlic
- 1 tbsp minced ginger
- 1 tsp minced jalapeño chili (with seeds)
Method

Clean shrimp

Dissolve 1 tbsp salt in 1 quart cold water.

Swish shrimp for 30 seconds and drain.

Repeat once more.

Rinse and pat dry.

Prepare seasoning

Mix remaining 1/2 tsp salt, sugar, and peppercorns.

Stir-fry

Heat wok over high heat.

Add 1 tbsp oil, garlic, ginger, and chili.

Stir-fry 10 seconds.

Cook shrimp
-
Add shrimp in a single layer.

Cook undisturbed 1 minute.

Add remaining oil and stir-fry until shrimp turn orange.

Finish

Sprinkle salt mixture and stir-fry 1–2 minutes until cooked.

Serves 2 as a main dish
