Classic Dry-Fried Pepper and Salt Shrimp

Ingredients

  • 1 lb large shrimp, peeled and deveined
  • 2 tbsp + 1/2 tsp salt
  • 1/4 tsp sugar
  • 1/4 tsp roasted Sichuan peppercorns (ground)
  • 2 tbsp grapeseed or vegetable oil
  • 1 tbsp minced garlic
  • 1 tbsp minced ginger
  • 1 tsp minced jalapeño chili (with seeds)

 

Method

  • Clean shrimp

    • Dissolve 1 tbsp salt in 1 quart cold water.

    • Swish shrimp for 30 seconds and drain.

    • Repeat once more.

    • Rinse and pat dry.

  • Prepare seasoning

    • Mix remaining 1/2 tsp salt, sugar, and peppercorns.

  • Stir-fry

    • Heat wok over high heat.

    • Add 1 tbsp oil, garlic, ginger, and chili.

    • Stir-fry 10 seconds.

  • Cook shrimp

    • Add shrimp in a single layer.

    • Cook undisturbed 1 minute.

    • Add remaining oil and stir-fry until shrimp turn orange.

  • Finish

    • Sprinkle salt mixture and stir-fry 1–2 minutes until cooked.

Yield

  • Serves 2 as a main dish

  • Serves 4 as part of a multi-course meal
