Lime-Ginger Vinaigrette

Yield: 2 pints
Standard serving size = 1 tablespoon
Conference serving size = 1 teaspoon

Ingredients:

  • Lime Juice                     800 g
  • Jalapeno, grated           24 g
  • Ginger, grated               40 g
  • Garlic, grated                2 g (1 each)
  • Salt                                 12 g
  • Black Pepper                 3 g
  • Tabasco                         5 dashes
  • Grape Seed Oil              250 g

Method:

  1. In a mixing bowl: combine lime juice, jalapeno, ginger, garlic, salt, pepper and tabasco. Stir well.
  2. Slowly stream in grape seed oil to incorporate.
  3. Store in pints.
